Homemade Protein Bars (Chocolate Peanut Butter Brownie)

Ya know how a lot of protein bars say "this tastes just like a brownie" but the flavor or the texture is always just off?


Not this time...

40m Total (10m prep, 15m oven, 15m cool down)

Makes 12-14 bars


INGREDIENTS:

  • 5 scoops of protein powder (I use unflavored collagen or bone broth protein powder)

  • 1/2 cup of coconut flour

  • 3/4 cup cocoa or cacao powder

  • 1/3 cup maple syrup

  • 5 eggs

  • 1/2 cup of gluten free oats

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 1/2 cup of oil (melted ghee or butter or avocado oil)

  • 1/2 cup of mini dark chocolate chips

  • light drizzle of raw local honey

  • light drizzle of all natural peanut butter


I always try to use organic ingredients if I can


RECIPE:

  1. Preheat the oven to 350 degrees. Cover a baking pan with parchment paper.

  2. In a bowl, combine your dry ingredients (protein powder, coconut flour, oats, cocoa or cacao powder, baking soda and salt) and mix.

  3. In a separate bowl, whisk your eggs until scrambled.

  4. Add wet ingredients (eggs, vanilla extract, maple syrup and oil) to the dry and mix until thoroughly incorporated into a batter-like dough.

  5. Mix in your chocolate chips.

  6. Using a spatula, pour the dough into the pan and spread evenly (about 1/4 to 1/2 inch depending on how thick you want your bars).

  7. Drizzle peanut butter and honey over the dough and swirl with a knife or toothpick.

  8. Bake for 15 minutes or until toothpick comes out clean.

  9. Remove from oven and let cool for another 15 minutes.

  10. Cut into bars and enjoy!

  11. Store in the fridge and enjoy within about 10 days or in the freezer for a few months!
