Homemade Protein Bars (Chocolate Chip Cookie)

I had been searching for so long to find a protein bar that had truly clean ingredients that was more protein than sugar and carbs (more than a glorified candy bar). I finally found a brand about a year ago that was awesome... then a few months ago and I learned that they decided to stop production!


That lead me to my determination to make my own bars from scratch - something to grab when I'm on the go and don't have the ability to make something but I still want clean, sustenance.


Of course, that also meant that it had to be easy and quick to make so that I could actually sustainably do it long term and be able to get it done while the baby is napping.


I'm super stoked on this recipe and hope you like it just as much as Tyler and I - I'll be posting variations and different flavors in the next week as well!

Makes 12 bars


INGREDIENTS:

  • 5 scoops of protein powder (I use unflavored Collagen or Bone Broth Protein)

  • 1 cup of coconut flour

  • 5 eggs

  • 1/2 cup of gluten free oats

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 1/2 cup natural maple syrup

  • 1/3 cup of oil (melted ghee or butter or avocado oil)

  • 1/2 cup of mini dark chocolate chips


I always try to use organic ingredients if I can


RECIPE:

  1. Preheat the oven to 350 degrees. Cover a baking pan with parchment paper.

  2. In a bowl, combine your dry ingredients (protein powder, coconut flour, oats, baking soda and salt) and mix.

  3. In a separate bowl, whisk your eggs until scrambled.

  4. Add wet ingredients (eggs, vanilla extract, maple syrup and oil) to the dry and mix until thoroughly incorporated into a batter-like dough.

  5. Using a spatula, pour the dough into the pan and spread evenly (about 1/4 to 1/2 inch depending on how thick you want your bars).

  6. Bake for 15 minutes or until toothpick comes out clean.

  7. Remove from oven and let cool for another 15 minutes.

  8. Cut into bars and enjoy!

  9. Store in the fridge and enjoy within about 10 days or in the freezer for a few months!
