Greek-Style Watermelon Salad

It seems a bit weird - I know - but when I say it was delicious, I mean delicious!


Tyler's great aunt sent us the recipe last week and I knew right then and there that we had to try it. To be honest, I wasn't sure if I was actually going to like it. I'd heard about watermelon salad before but never took a swing at it... now I can't stop wondering why we waited so long! (I modified the recipe slightly by adding spinach and chia seeds). It was one of the most refreshing salads I've ever had and it's officially a summer recipe keeper!

INGREDIENTS

  • 1 baby watermelon

  • 1/2 of a large cucumber

  • 1 handful of cherry tomatoes

  • 1/2 cup of feta cheese

  • 1 handful of spinach (chopped)

  • 1 generous pinch of fresh parsley (chopped)

  • 1 generous pinch of fresh mint (chopped)

  • 1 tbsp of chia seeds (optional)

  • 2 tbsp of sliced kalamata olives

  • Juice from 1 freshly squeezed lemon

  • Salt (to taste)

  • Pepper (to taste)

  • Extra virgin olive oil

  • Red Wine Vinegar


RECIPE

  1. Chop your watermelon into bite-sized chunks. You will also wash and chop your cucumber (I cut each slice in half) and your cherry tomatoes. Place them all into a big bowl when finished chopping.

  2. Next, finely chop your spinach, mint leaves and parsley. Then add to the bowl.

  3. Now add your feta cheese, olives and chia seeds.

  4. Once everything is in the bowl, it's time to season your salad! (Note: if you don't plan on eating the salad right away, do not dress it, as it can get soggy. Instead, cover the bowl and place in the fridge until you're ready to eat. Then dress and enjoy!) Squeeze your lemon and add the juice. You will also add your salt, pepper, olive oil and vinegar.

  5. Lastly, mix it all together, plate it and enjoy!

We always try to incorporate a protein into our meals so I cooked up some leftover chicken sausage we had in the fridge. I can also see this tasting great with grilled chicken, a nice juicy steak or even some grilled shrimp!
